Every cuisine has its own special sauce that at mealtime is pulled from a cool place or prepared fresh and brought to the table (in some cultures, even at breakfast). Some of these sauces, such as salsa and ketchup, go over food. Some, such as wasabi and Thai peanut sauceΓÇöand, in most cases, mustard and mayonnaiseΓÇöare for dipping. Chefs have given us many wonderful innovations for these sauces, but most of the recipes remain simple.
